Thinking Outside the Lunchbox

The verdict is in my coconut curry chickpeas: the kids love it! It’s so exciting to see our students’ taste buds being challenged and expanded with new foods and flavors from around the world. I use Thai brand green curry paste with coconut milk and some molasses, and serve the sauce over chickpeas, rice, and vegetables. Let me know if you have any recipes that can challenge our kids to think outside of the lunchbox!
