The verdict is in my coconut curry chickpeas: the kids love it! It’s so exciting to see our students’ taste buds being challenged and expanded with new foods and flavors from around the world. I use Thai brand green curry paste with coconut milk and some molasses, and serve the sauce over chickpeas, rice, and vegetables.
